La natura ha fatto un singolare dono alla Valchiavenna: nelle gallerie naturali dei suoi monti, da tempo immemorabile fa soffiare il "sorel", un misterioso venticello che ha una temperatura costante di 8°C. Gli abitanti della valle, all'ingresso delle maggiori di tali gallerie, hanno edificato i "Crotti".

Nei Crotti ci si riunisce tra amici e per passare il tempo in allegria si bene il vino buono accompagnato da alcune specialità gastronomiche della valle: bresaola, "violini", formaggi.


I locali dell'antico Crotto Ombra, il più noto tra i crotti tuttora esistenti il località Pratogiano di Chiavenna, ospitano oggi il nostro ristorante, meta gastronomica per gli amanti della buona cucina, dove si possono gustare i piatti della più semplice ed antica tradizione gastronomica valchiavennasca.

Nature has given the Valchiavenna a unique gift - the "sorel", which is dialect for the geological phenomenon that draws air down inside the mountains, flowing through crevices of ancient rock slides. Gushing out at the valley floor, this current blows a constant 48°F, and is ideal for the storing of wine and cheese and the curing of meat. Since time immemorial, the people here built their "Crotto" over these sorel, and soon the Crotto became synonymous with fun and enjoyment.


To this day, friends and family gather at the Crotto to pass the time in good company, drinking wine accompanied with the local gastronomic pleasures: "bresaola", "violini" and local cheeses.

In Chiavenna, the most noted of these crottos is Crotto Ombra whose restaurant still offers the traditional foods of the area based on simple and authentic recipes.
